7 secrets of food storing aboard

Learn these seven secrets from cruising legends Hal and Margaret Roth that served them time and again for over 100,000 offshore sailing miles.

Refrigeration aboard gives you the luxury of long term provisioning. But you have to accept the fact that complex systems such as these require lots of care. What are some things to keep in mind when you provision your food stores aboard?

1. Eggs, potatoes, and onions
Apply a light coat of petroleum jelly to each of these foods. This seals out moisture and air to keep them fresh for 28 to 30 days.

2. Wrap citrus fruits
Use aluminum foil to cover lemons, limes, grapefruit, and oranges. This extends their life up to 30 days without refrigeration.

3. Keep cool and dry
Put carrots and cabbages in dry, cool areas with good circulation all around. Fishnet bags are ideal. Expect them to last 14 to 21 days.

4. Store grains long term
Place rice and spaghetti products in containers. Fill to the top to keep air space to a minimum. For rice, soak a cotton pad with high-octane grain alcohol and place it on top before you seal the container. Both grains last up to one year.

5. Maintain wax integrity
As long as you keep a wax seal unbroken, cheese will keep for long periods. Choose from Gouda, Tillamook, Edam, Bonbel and wheel cheeses.

6. Substitute veggie-protein
Soybean granules make a tasty substitute for ground beef. Use them to make spaghetti sauce or macaroni and beef. They provide an excellent source of protein for tired, hungry sailing crews.

7. Enjoy your sweet tooth
Make your favorite jam or jelly last longer with canning. Keep the air out and these sweet products last many months. Once opened, use the product within 7 days.
